PRODUCT AND ITS USES

 
Mushrooms, yeasts and algal foods are frequently mentioned as alternative sources of food. Of these mushrooms are the most preferred. Modern cultured mushroom produce more proteins per unit area of land than by any other form of agriculture. The efficiency with which mushrooms convert carbohydrates into proteins is about 65% in comparison to about 20% for pork, 15% for poultry and 4% for beef.
 

Use of mushrooms as a food is probably as old as civilization itself and is considered a delicacy since ancient times.

 
The nutritional value of mushroom was recognized only in recent times. Mushrooms are richer in proteins as compared to cereals, pulses, fruits and vegetables on dry weight basis. The mushrooms proteins have 60-70% digestibility and contains all the essential amino acids.
 
Mushrooms also contain vitamins B C D and K and minerals like calcium, phosphorous, iron and copper and are completely devoid of starch and hence can constitute a good item in the diet of diabetic persons as well. It has been reported that 100 to 200 gms (dry weight) of mushrooms can provide nutritional balance to a normal human being. Mushrooms are being used in life saving drugs, antibiotics and biologically active substances, apart from various industrial uses mushrooms are relatively rich in Lysine and Leucine. Normally these two amino acids are not present in other vegetarian diet.

Mushrooms help in circulation of blood and therefore, are very helpful to prevent cardiac arrest. Similarly they can serve as a good antidote for beriberi. Because of low calories mushrooms form a very good diet in diabetes and excessively obese persons. A mushroom diet is mandatory for astronauts, mountaineers and hikers.

 
Their folic acid content is superior to liver and spinach. As a foods their nutrition value lies between meat and vegetable. Because of their test enhancing properties they are added to many meat, vegetable and rice dishes apart from making excellent dishes independently. Mushrooms have long been known as queen of vegetables. They have also been demonstrated to possess cancer protective effect by National Cancer Research Institute of Japan. Mushrooms are also started using in baby food.
 

USES

Pharmacological Activities In Mushrooms.

Many mushrooms have traditionally been used as medicine and tonic In China, Korea and Japan. Importance and uses of Ganoderma lucidum, Coriolus versicolor, Hericium erinaceus, Marasmius, Tremella fuciformis and Lentinus edodes etc. in Chinese medicine are summarized in Table.

Nutritional Value
Search for alternative sources of protein for a predominantly vegetarian population of this country has to concentrate on a vegetable protein. Mushrooms have been recognized by FAO as food contributing to the protein nutrition of the countries depending largely on cereals. Mushrooms, like other vegetables, contain about 90% moisture and are basically a low calorie food (about 30 calories /100g fresh weight).
Total carbohydrate content is 4-5% which consists of chitin, hemicellulose and glycogen. Very little amount of free sugar (0.5%) are present. Starch is absent. The fat content is very low(0.3%), but it is rich in PUFA, linoleic acid (70%). Cholesterol, the dreaded sterol for heart patients, is absent and in its place ergosterol is present which can be converted into vitamin D by the human body. Fibre content is high which is helpful in excretion of waste and prevention of constipation.
It has been observed that calories rarely lack in Indian diet which is primarily cereal based but it is deficient in quality protein. Protein malnutrition particularly in infant, children, pregnant and lactating women is the biggest nutritional problem of our country.

Therefore the answer is Mushrooms, which contains 20-35% protein( about 3% on fresh weights basis) which is higher than most of the vegetables. Quality of mushroom protein is superior to vegetable proteins and is good as animal protein. Digestibility of mushroom protein is also high.

Suggestion of fighting protein malnutrition such a costly item as mushrooms has often been questioned. But in India, consumer is not only consumer, he is, most often the producer of his food item: landless workers and small farmers could be motivated to produce mushrooms, especially the pleurotus on residual wastes and consume them.

 
Canned Mushrooms
 
These are Whole Button Mushrooms. Product consists of caps with attached stems in which at least 90% of the stems are not longer than half of the cap diameter. Colour of the mushroom is off white to pale cream. The cap diameter vary from 35-45 mm

These are superior Quality Pieces and Stems mushrooms. Product consists of fairly regular sized units of reasonable integrity, the majority of those being sliced longitudinally. It is distinguishable from regular pieces and stems because of the presence of a fair amount of silhouettes and the slice thickness is 4.5 to 6.0mm.
 
 
Pieces and stems are mushrooms consisting of cut or broken portions of caps and stems and may contain a mixture of whole, buttons, sliced whole or sliced buttons.
